Xôi Mặn - The Most Comforting Vietnamese Savory Sticky Rice

Xôi Mặn (Savory Sticky Rice) always hits the spot. It's the perfect breakfast consisting of soft, unctuous sticky rice that is adorn with Vietnamese ham (chả lụa) and Chinese sausages, covered in a sweet-salty soy-based glaze.

Equipment

Ingredients

Sticky Rice

  • 2 2/3 cups Glutinous (sticky) rice
  • 2 1/4 cups water
  • 1 tbsp Neutral oil

Toppings

  • 1 roll Vietnamese ham (chả lụa) cut into matchsticks
  • 3-4 Chinese sausages cut into thin rounds
  • 1 tbsp Light soy sauce
  • 1 tbsp Dark soy sauce
  • 1 tbsp Sugar
  • 1/4 tsp Black pepper

Egg Ribbons

  • 4 Eggs
  • 1 tsp Fish sauce

Garnishes (optional)

Instructions

  • Prepare Toppings: Cut up Vietnamese ham and Chinese sausages into bite sized pieces and marinate with sauces. Transfer to a plate that is safe for the rice cooker.
  • Wash the Rice: Wash and drain glutinous rice. Transfer into inner pot of rice cooker with water and splash of oil.
  • Transfer: Place the plate of toppings on a Steaming Rack in your rice cooker or on a trivet. Or, pan fry on the stove for 3-4 mins.
  • Cook: Set to Sweet Rice mode and cook. When finished, mix the toppings with the rice.
  • Garnish and Serve: Serve with additional toppings such as quail eggs, fried egg ribbons, pork floss, scallion oil and fried shallots.

Notes

Important Note: If your rice cooker does not have a Sweet Rice or Glutinous Rice function, soak the sticky rice for at least 2 hours, drain well, reduce the water to 1¾ cups (425 mL), and cook using the regular Cook setting.
