Prep the Aromatics: Finely mince 1 oz of lemongrass, 3 cloves of garlic, and your shallots.
Mix the Thick Paste: In a small bowl, combine the minced aromatics with 1 tbsp of water, 1/2 tsp of salt, 2 tsp of sugar, 1 tsp of chicken powder, 1/5 tsp of double-acting baking powder, and 1 tbsp of vegetable oil (or annatto oil if you prefer a vibrant orange hue over the natural old-school pink color). Mix until it forms a thick paste.
The 1-Hour Sheet Freeze: Transfer your fresh ground pork into a clean Ziploc bag, pour in the marinade paste, and massage thoroughly to incorporate. Flatten the meat inside the bag evenly into a 0.4-inch thin sheet. Freeze for exactly 1 hour until cold and firm, but still pliable.
Process to a Dough: Break up the chilled meat sheet and drop it into a food processor fitted with an iron blade. Add 4 tbsp of bread crumbs, 1 tbsp of honey, and 1/2 tsp of black pepper. Grind on low speed for 30 seconds until a cohesive dough forms, then blast on high speed for another 30 seconds to achieve a fine, smooth paste. Do not overgrind! (If using a stand mixer with a paddle attachment, mix on low speed for 10–12 minutes).
Shape and Skewer: Soak your bamboo chopsticks in water. Put on wet disposable gloves and divide the sticky paste into 10 equal portions (about 1.6 oz each). Roll each portion into a ball, pierce with a skewer, and gently squeeze into an oval tube shape, sealing any air holes tightly. (Alternatively, utilize the Ziploc bag rolling hack!).
Glaze and High-Heat Cook:Oven Method: Preheat your oven to High Broil. Arrange the skewers on a roasting rack, brush one side with a thin layer of the oil, soy sauce, and honey glaze, and roast on the central rack for 2.5 to 3 minutes maximum. Flip, brush the remaining side with glaze, and broil for another 3 minutes.Air Fryer Method: Arrange the skewers in a single layer in the basket and air fry at 335°F for 10–11 minutes. Assemble the Platter: Slide the hot sausages off the skewers and cut each into 4 pieces. Drizzle immediately with warm scallion oil and crushed roasted peanuts. Serve alongside a massive platter of rice paper, fine rice vermicelli sheets (Bánh Hỏi), fresh lettuce, cucumber slices, bean sprouts, pickled carrots and daikon, fresh herbs (spearmint, perilla, fish mint), and crisp slices of green mango or apple.
